An amine is a compound including nitrogen that is like ammonia (NH3) except that in place of one or more of the three hydrogen atoms is some group of atoms, each group essentially consisting of "most of a hydrocarbon". Amino acids are examples of amines. (Whether ammonia itself should be called the simplest amine is a matter of semantics.)
